Turkey, Swiss, and Roasted Red Pepper Sandwich

This is a favorite quick fix hot sandwich of mine.  It’s simple with several layers of flavor.  Plus I love the splash of color the pepper gives.

Ingredients:

  • 1 whole grain roll
  • 3-4 oz. deli smoked turkey
  • 1 slice Swiss cheese
  • roasted red peppers
  • oregano

Directions:

  1. Layer the meat, pepper, cheese, and oregano on the roll.
  2. Pop it in the toaster until the cheese goes melty and the bread browns at the edges.
